In these classes you will be exposed to the aromatic, piquant flavors of the traditional Moroccan cuisine. You will learn how to prepare a variety of intensely flavored and healthful dishes – all made with organic and/or locally grown ingredients.

Sunday, March 16th, 2008 from 3:00 pm – 6:30 pm

Menu:

• Beet Salad
• Tomato and Caper Salad
• Harira – A hearty traditional soup served during the month of Ramadan
• Lamb Tajine with onion and prunes
• Semolina Cake
• Moroccan Mint Tea

Sunday, March 30th, 2008 from 3:00 pm – 6:30 pm

Menu:

• Spinach Salad with Moroccan Spices
• Checkchouka (Tomato and Pepper Salad)
• Bessara (Dried Fava Bean Soup)
• Seffa (Steamed Short Semolina Noodles) with Chicken
• Chocolate and Almond Moroccan Cookies
• Moroccan Mint Tea

Instructor: Laila Ben
A native of Morocco and a graduate of the Institute for Integrative Nutrition, Laila grew up in a household where every single meal was made from scratch using fresh, whole foods. It was unhurried food made with love where bountiful family meals could always accommodate an unexpected guest. Laila learned to cook at a very early age by helping her mother in the kitchen, and she will share the secrets of traditional homemade Moroccan cooking with all of you.

Fee: $75.00 per class or save $10 if you sign up for both classes
