STORAGE TIPS
- Store all the root vegetables (except the potatoes) in a tight plastic bag(ziploc or other type) or plastic container either in the fridge or where they can remain below 38F degrees. DO NOT LEAVE ANY OF THE ROOTS UNWRAPPED IN THE FRIDGE OR IN THE CRISPER. THEY WILL DEHYDRATE!!!! Same goes for leaving produce out on the counter, so don’t do it!
- Potatoes should be stored in a cool, dry place ultimately between 38 and 40F degrees. They can kept in perforated plastic bag or wax paper bag. A garage or unheated porch or patio is a good place as long as it doesn’t freeze.
- Leeks can be stored like the other roots.
- Kale should be stored in a tightly wrapped plastic bag. You can dunk the kale in cold water, shake off excess water, and store in a plastic bag with a paper towel for up to a week.
- Do not store apples and pears together with your vegetables.

ROASTED- All of the roots are excellent roasted with olive oil and salt and any other seasonings one likes to cook with.
SOUPS- Soups are an easy, nutritious, and fast way to use lots of roots.
GRATINS- Some of the roots can be used in gratins.
RAW- Carrots and the japanese white turnips are excellent raw as crudite, in salads, or a snack eaten out of your hand.
